The whisky is inspired by the journey of Euan Kennedy, The Macallan Lead Whisky Maker, who has translated it into a unique whisky that captures the energy and complexity of the city. The menu draws inspiration from Joan Roca's immersion in the dynamic, cosmopolitan essence of Hong Kong, a city in perpetual evolution.
"This is a deeply personal whisky, inspired by my time with Joan Roca exploring HongKong. It is big and bold. I wanted to develop the idea of structure in this whisky, reflectiveof the building environment rising from the sea to the green peaks behind. To createcontrast within this whisky, in the same way Hong Kong is a city of contrast. A whiskywith many layers, to be returned to again and again to find more stories to tell, itsincredible complexity transporting you on a journey of flavour and memory."

In their creations, the Roca brothers artfully mirror the urban landscape of Hong Kong: the towering skyscrapers, the resolute strength, the vibrant hues, and the pulsating energy—all manifest in every meticulously crafted dish.
The Art
The vibrant royal blue was chosen as it reflects the blue waters that surround Hong Kong. The beautifully detailed art print by Flyingpig includes elements of nature and community spirit, values which are instilled within The Macallan.
Pat WingShan Wong (aka Flyingpig) is the assistant professor in the Academy of Visual Art, Hong Kong Baptist University (BUAVA). Her practice lies in the intersections of architecture, technology, memory and identity that portray community stories ranging from people to landscapes and objects from her surroundings.
